This is one of my favorite things to make in Austria! I grew up in Argentina and one of the things I miss the most are empanadas! I really did not want to make the dough from scratch, so this was the closest I could get to an empanada dough. Gladly, they turned out great and were delicious!
Here is the recipe (12 empanadas):
– Mix 500gr Grated gouda cheese, 3 eggs, 3 tsp of sugar, 1 tsp of salt. The cheese has to be covered with egg. If you see that the mix is dry, then add another egg… if it is too wet, add more cheese.
– For the dough, I use Tante Fanny’s Frischer Blätterteig, a kind of puff pastry dough. I think many salted doughs would work for this.
– I use a Tupperware empanada maker to cut the circle shapes, put the mix inside and seal it.
– Once all the empanadas are prepared, I sprinkle sugar on top of them. And put them in the oven for as long as the dough package says.
